KFC is one of the clearest examples in fast food of the coating mattering more than the food. The same chicken breast is about 210 calories grilled, 390 as Original Recipe, and 530 as Extra Crispy. The bird did not change. The breading did.
What makes that striking is the protein: the grilled breast delivers about 38g, essentially matching the Extra Crispy breast's 35g. You are paying 320 extra calories for crunch, not for chicken.

Fried chicken has a reputation, but the numbers are kinder than you would guess. An Original Recipe breast is about 390 calories for 39g of protein — a better protein-to-calorie ratio than most burgers, because you are eating a piece of chicken rather than a bun.
Kentucky Grilled Chicken takes that further. At roughly 210 calories for 38g of protein, a grilled breast is among the most protein-dense items available at any drive-through. Two of them come to about 420 calories and 76g of protein — a genuinely excellent meal that happens to be sold at KFC.
An individual Secret Recipe Fries is about 320 calories — almost as much as an Original Recipe breast. The Family size is about 840. Sides at KFC are a second meal wearing a small cardboard box.
Mashed potatoes are about 110 calories plain and 130 with gravy. The gravy is not the problem — that is a 20-calorie decision. Skip it if you want, but spend your attention on the fries instead.
